In Japan ist die Chrysantheme Symbolblume des japanischen Kaiserhauses und hat den Rang einer Nationalblume. In beiden Ländern liebt man nicht nur ihre Formen- und Farbenvielfalt, sondern schreibt ihr große Heilwirkung zu. Schon im frühen Mittelalter wurden chinesische Chrysanthemen als Heilpflanzen verwendet, und auch heute noch werden sie in China für die Herstellung von Arzneimitteln und Stärkungsmitteln genutzt. Die über 3000 Chrysanthemenarten teilen sich im allgemeinen in zwei Kategorien: die Zier-Chrysantheme zur Verschönung der Umwelt und die essbare Chrysantheme. Chrysanthemen sind Augenschmaus und Gaumenfreude zugleich. Essbar sind sowohl die Blüten, als auch die Blätter. Es gibt spezielle Speise- Chrysanthemen, die, einmal ausgesät, rasch in die Höhe wachsen. Sie werden geerntet, wenn sie 10 - 20 cm hoch sind.
